Prepare as much as possible in advance so you'll have less to do once your guests arrive.

Our tip: Let the rolls rise overnight A gratin dish or a deep baking sheet works best for this. Adjust the yeast amount in the recipe to 5 g, skip the dough-rising step in Step 2, and shape the dough directly into balls as described in Step 3, then place them in the prepared dish. Cover with plastic wrap and let rise overnight in the refrigerator. Remove the rolls from the refrigerator about 1 hour before baking. Brush with milk and let rise again at room temperature for about 30 minutes. Bake the rolls as described in step 4 and your guests will enjoy freshly baked rolls!
