Tomatoes come in many shapes, colours and sizes. Standard tomatoes are the most versatile, and good all the year round. Choose plum tomatoes for cooking as their low water content produces a more intense flavour. Cherry tomatoes are the sweetest, and good for salads or sauces. Beef tomatoes are large and juicy, delicious both raw and cooked. Green tomatoes are a variety that stays green even when ripe, and should not be eaten raw. As for yellow tomatoes, there is no difference with red ones, but a mix will brighten up your salad bowl!
