Choose plum tomatoes for cooking as their low water content produces a more intense flavour. Cherry tomatoes are the sweetest, and good for salads or sauces. Beef tomatoes are large and juicy, delicious both raw and cooked. Green tomatoes are a variety that stays green even when ripe, and should not be eaten raw. As for yellow tomatoes, there is no difference with red ones, but a mix will brighten up your salad bowl!
