Ingredients

Marinade

  • 64 oz pork shoulder (approx. 1 roast 4 lb)
  • 20 garlic cloves
  • 2 tsp salt
  • 1 tsp black peppercorns
  • 1 tsp dried oregano
  • ½ tsp cumin seeds
  • 12 oz orange juice
  • 6 oz lemon juice
  • 8 oz extra virgin olive oil

Yeast Starter

  • 4 oz water
  • 2 ½ oz bread flour
  • ½ tsp active dry yeast

Bread

  • 6 oz water, plus extra to brush or spray
  • 2 tsp sugar
  • 2 ¼ tsp active dry yeast
  • 1 ½ oz lard, plus extra to grease
  • 15 oz bread flour, divided
  • 2 tsp salt

Assembly

  • 2 - 3 oz butter, melted, divided, to grill and brush
  • 8 slices deli ham, smoked
  • yellow mustard, to serve
  • 8 slices Swiss cheese
  • 8 oz dill pickles (approx. 2), thinly sliced, lengthwise
