  • 1 Chinese black cardamom pod (cao guo), cracked open

  • 2 star anise
  • 1 tsp Sichuan peppercorns
  • 100 g white onion, cut in pieces
  • 50 g dark soy sauce
  • 60 g light soy sauce
  • 5 g salt (about 1 tsp)
  • 30 g sugar
