Ingredients

Piri Piri Chicken

  • 3 garlic cloves
  • 4 fresh red chillies, stems removed, halved
  • 2 - 4 dried bird's eye chillies, to taste
  • ½ Tbsp smoked paprika
  • 1 tsp coarse sea salt
  • ½ tsp dried oregano
  • 100 g olive oil
  • 50 g red wine vinegar
  • 1500 g uncooked, whole chicken, spatchcocked (see tip)

Vegetable Salad

  • 500 g mixed vegetables, cut in pieces (5-6 cm), (e.g. celeriac, broccoli, carrots, peppers)
  • 100 g mayonnaise
  • 1 tsp fine sea salt, to taste
  • ¼ tsp ground black pepper
  • 1 ½ Tbsp Dijon mustard
