  • 180 g egg whites (approx. 6 medium egg whites)
  • 150 g caster sugar, plus extra for sprinkling
  • 105 g rice flour
  • 45 g cornflour
  • 1 pinch fine sea salt
  • 120 g egg yolks (approx. 8 medium egg yolks)
  • 1 tsp grated lemon zest (approx. ½ lemon)

Dairy-free Tiramisu Filling

  • 900 g silken tofu, drained, patted dry, cut in pieces (3 cm)
  • 90 g caster sugar
  • 4 Tbsp sweet Marsala wine
  • unsweetened cocoa powder, for dusting
