Caramelised Onions
- 400 g red onions, sliced (5 mm)
- 30 g olive oil
- 1 pinch fine sea salt
- 15 g cider vinegar
Guacamole
- 60 g spring onions, white part only, cut in pieces
- 100 g ripe tomatoes, halved
- 1 - 2 sprigs fresh coriander, to taste, leaves only

ou 1 tsp Tabasco® sauce, green - 15 g lime juice
- 400 - 450 g ripe avocados, cut in pieces
- ¼ tsp fine sea salt
Gluten-free Onion Rings
- 400 g onions, sliced (5 mm) and separated into rings
- 1 tsp fine sea salt
- 1 tsp paprika
- 1 tsp garlic powder
- 150 g sparkling mineral water, chilled
- 1 egg yolk, from medium egg
- 160 g rice flour
- sunflower oil, for frying
Beef Patties
- 1 garlic clove
- 80 g pickled gherkins, cut in pieces
- 1 tsp fine sea salt, plus extra to taste
- 1 Tbsp wholegrain mustard
- ½ Tbsp ground black pepper
- 600 g beef mince, broken in pieces
- 1 medium egg
- 1 tsp sunflower oil, for frying
- 6 slices Cheddar cheese or cheese of choice
Assembly
