  • unsalted butter, for greasing

Cod with Potatoes and Courgettes

  • 1 orange, thin peelings of zest and juice
  • 1 lemon, thin peelings of zest and juice
  • 700 g water
  • 400 g potatoes, cut in pieces
  • 400 g courgettes, cut in slices (5 mm)
  • unsalted butter, for greasing
  • 4 cod fillets, skinless (120-200 g each)
  • 1 tsp fine sea salt, adjust to taste
  • ½ tsp ground black pepper, adjust to taste

Muffins

  • 150 g milk chocolate, cut in pieces
  • 150 g unsalted butter, cut in pieces
  • 2 medium eggs
  • 250 g caster sugar
  • 300 g plain flour
  • 1 pinch fine sea salt
  • 300 g whole milk
  • 2 tsp baking powder (10 g)

Citrus Butter

  • 80 g unsalted butter
  • 1 tsp whole aniseed
    or 1 tsp dried fennel seeds
  • 3 sprigs fresh parsley, leaves only, chopped
