Ingredients

Meatballs

  • olive oil, for greasing
  • 1000 g water
  • 80 g red quinoa
    or 80 g quinoa
  • 60 g onions, quartered
  • 2 garlic cloves
  • 30 g fresh mixed herbs (e.g. parsley, thyme, oregano)
  • 1 tsp fine sea salt, or to taste
  • 1 tsp ground black pepper
  • ½ tsp dried chilli flakes
  • ¼ tsp dried fennel seeds
  • 550 g turkey meat, boneless and skinless, cut in pieces (3 cm) (see tip).
  • 1 large egg
  • 25 - 35 pitted black olives, sliced

Tomato Sauce

  • 110 g onions, quartered
  • 2 garlic cloves
  • 30 g olive oil
  • 800 g tinned chopped tomatoes (2 x 400 g tins)
  • ½ tsp fine sea salt, or to taste
  • ½ tsp ground black pepper

Spooky Spaghetti

  • 1150 g water
  • 1 ½ tsp fine sea salt
  • 340 g dried spaghetti (see tip)
