Ingredients

Bread Dough

  • 1 Tbsp dried instant yeast
  • 350 g water
  • 750 g strong white bread flour, plus extra for dusting
  • 1 ½ tsp fine sea salt

Durban Curry

  • 3 garlic cloves
  • 120 g onions, quartered
  • 30 g fresh root ginger, peeled, cut in round slices (2 mm)
  • 30 g vegetable oil, plus extra for greasing
  • 1 star anise
  • 2 Tbsp garam masala
  • 1 ½ tsp dried fennel seeds
  • ½ tsp ground cinnamon
  • ½ tsp chilli powder
  • 50 g tomato purée
  • 750 g stewing steak, cut in pieces (3 cm)
  • 1 beef stock cube (for 0.5 l), crumbled
    or 1 heaped tsp beef stock paste, homemade
  • 400 g water

Sambal and Assembly

  • 200 g tomatoes, diced (1 cm)
  • 100 g red onions, diced (5 mm)
  • ½ - 1 fresh green chilli, deseeded, diced (5 mm), to taste
  • 5 sprigs fresh coriander, leaves only, roughly chopped
  • 1 Tbsp red wine vinegar
  • 3 Tbsp olive oil
