Marinade
- 80 g Stone's Green Ginger Wine
- 500 - 600 g pork fillets or pork medallions (approx. 2-3 fillets), trimmed and cut into strips (1 x 10 cm)
- 2 tbsp hoi sin sauce
- 1 tsp olive oil
Black bean sauce
- ½ - 1 long red chilli, deseeded if preferred (optional)
- 2 garlic cloves
- 400 g canned unsalted black beans
- 60 g soy sauce or tamari
- 1 tsp sesame oil
- 1 tbsp Chinese cooking wine or dry sherry
- 80 g water
- 1 tsp palm sugar (1 cm cube), grated
Rice and vegetables
- 300 g white rice
- 900 g water
- 1 bunch broccolini (approx. 180 g), trimmed and cut into thirds
- 230 g canned bamboo shoots, rinsed and drained (weight is pre-draining)
- 1 spring onion/shallot, trimmed and thinly sliced, for garnishing
- 1 - 2 sprigs fresh coriander, leaves only, for garnishing
