Ingredients

Chipotle Mayonnaise

  • 100 g extra virgin olive oil
  • ½ lime
  • 1 egg yolk, from a large egg, room temperature
  • 1 - 2 chipotle chillies in adobo sauce, canned (undrained)
  • ¼ tsp salt, to taste
  • 15 g sour cream, any type
    or 15 g plain yogurt

Cilantro Salsa

  • 115 g onions, in pieces
  • 15 g extra virgin olive oil
  • ½ tsp chilli powder
  • ¼ tsp salt
  • 1 lime
  • 20 sprigs cilantro, fresh, leaves only

Corn

  • 680 g water
  • 3 sweet corn cobs, silks and husks removed and cobs cut in half
  • 10 g pecorino, grated, to serve (see Tip)
    or 100 g Cotija cheese, crumbled
