- 250 g fresh raspberries, or frozen raspberries, thawed
- 100 g caster sugar
- 20 g lemon juice (approx. ½ lemon)
Mascarpone layer
- 500 g mascarpone cheese
- 100 g caster sugar
- 3 eggs, separated
- 1 pinch sea salt
- 6 tbsp Drambuie (50 g)
- 250 g fresh raspberries, or frozen raspberries, thawed and well drained, plus extra for garnishing
- 50 g milk chocolate, shaved, for garnishing
