Ingredients
- 800 g beef brisket, trimmed and cut into pieces (4 cm)
- 2 tsp dried oregano
- 1 tsp smoked paprika
- 2 tsp ground cumin
- 1 tsp ground coriander
- ½ tsp cayenne pepper
- ½ tsp sea salt
- 1 - 2 pinches ground black pepper
- 20 g fresh coriander roots and stalks (leaves reserved for garnishing - see Tips)

- 200 g red onion, cut into wedges (approx. 4 cm)
- 1 - 2 fresh jalapeño chillies, deseeded if preferred and cut into pieces (optional)
- 180 g capsicums (red or yellow), deseeded and cut into pieces (2.5 cm)
- 2 tsp cocoa powder
- 1 tbsp red wine vinegar
- 400 g canned whole tomatoes
- 1 tsp instant granulated coffee
- 400 g canned kidney beans, rinsed and drained (approx. 250 g after draining)
