Raw vegetable salad

You can use this raw vegetable salad recipe to easily create your own salads with seasonal fruit and vegetables or whatever you have in your fridge. You can also use just one vegetable, e.g. carrot salad.

Use your favourite oil and vinegar or something that needs to be used up. Instead of vinegar, you can use lemon or the broth from preserves (e.g. capers, pickled cucumbers). If you still have fresh herbs, nuts or seeds, you can use them to spice up your raw food. The chopping time depends on the texture and quantity of the selected vegetables and fruit. Tender vegetables and fruit and small quantities may only need 3 seconds, just check and chop further if necessary.

Cooking leftover food

Ice cream where nobody thinks that food has been saved!

You can use this fruit ice cream recipe to create your own ice cream without any colorings or additives. You can use a fruit mix or just one type of fruit, such as raspberries, apricots or peaches.

If you have leftover fruit, freeze them in 3 cm x 3 cm pieces for future fruit ice cream. Vary your ice cream's creaminess by adjusting the fat content of milk, coconut milk, cream, yogurt, or kefir. Experiment with toppings like chocolate chips, nuts, whipped cream, or leftover biscuits. Blend any remaining ice cream with milk or plant milk for a milkshake treat. Enjoy the endless possibilities!

In many main dishes, you can simply swap out the vegetables or use more of one and less of another. If something is not available, think about what is similar and could replace what is not there. Top or add to your liking. These recipes serve as a template for inspiration and your own variation.

You can add your favorite toppings or fillings, e.g. vegetables, salami, ham, other types of cheese, fruit or herbs, to pizza, quiche, vegetable gratin or quiche. This guarantees a variety of dishes for every taste. Be bold and let your creativity run wild.

You can use this apple pie recipe to use up old apples, even unpeeled.

You can replace the apples with pears (prepared like the apples), plums (halved and pitted), peaches (halved, pitted and prepared like the apples), apricots (halved and pitted) or other fruit of your choice. The amount of fruit depends on the size of the cake. You will need enough to cover the entire cake. Some cakes and tarts contain rum or other alcohol. Here too, you can replace it with brandy, for example, or leave it out completely.
